Crab with Ginger Sauce

2 T fresh ginger, minced
1 t olive oil
2 T vinegar
1 t cornstarch in 1 cup chicken or fish stock

1 lb fresh crab meat

2 T fresh cilantro, chopped

1. Saute fresh ginger in olive oil for 2-3". Add vinegar. Reduce heat to simmer. Add cornstarch and stock, and stir until thickened.

2. Add crab, and stir until mixed.

3. Serve sprinkled with fresh cilantro on rice or coos coos
